put all together and soak for 2 hours. Grind coarsely with 4 vara molaga, 1 teaspoon sombu, uppu. After grinding, add little perungaya thool. Immediately ready for pouring dosais!
THUVARAM PARUPPU DOSAI

3/4 olakku thuvaram paruppu
Soak separately for 2 hours. Grind paruppu coarsely first. Next, arisi + 4 vara molaga + 1 teaspoon – fine ah araikanum. Then mix both and add perungaya thool, uppu. Ready to make dosas!
PESARATTU

1 olakku pasi payaru – soak overnight
In a mixie, grind 1 teaspoon seeragam, 1 big medium size pacha molaga, 1 thundu inji, 1 teaspoon uppu, grind all finely. Mix 2 tablespoons of arisi maavu for crispiness.
Sprinkle chopped vengayam on top. Thiruppi poda koodathu. Moodi vachu oothanum.
KOTHUMAI DOSAI
1 olakku kothumai maavu karaikanum with water to semi watery consistency – can use whisk for ease.
In a pan, saute – kadugu, periya vengayam, pacha molagai, uppu, chopped karuvepillai. rendu moonu vathakku vathakittu, maavu la pottu, dosai oothanum.
The vengayam has to be chopped finely for ease of pouring dosais. Pour from outer to inner of the dosai kal.
RAVA DOSAI
1 veesampadi ravai – soak for 45 mins with twice the amount of water.
1/2 olakku kothumai maavu, uppu – mix all together.
Thalippu: ennai, kadugu, periya vengayam finely chopped, chopped karuvepillai, inji, kothamalli, uppu, pepper and jeera iddichu podanum. Pour in batter, keep it watery. The dosa kal has to be hot hot. Pour from outside to inside.

3 big potatoes – keep in cooker for 10 mins after whistle – eduthu uthukanum.
In a pan, kadugu, ulundhu, karuvepillai, vengayam,pacha molagai (keeri podanum), carrot and beans chopped small, thani molagai thool, manjal thool, uppu and potatoes. Put oil and sim la vachu peratanum.
